“Becky Kennedy’s Chicken Salad”

The famous, “better than sex” chicken salad from Senator John Kennedy’s wife

If you’re a fan of folksy aphorisms or lightly outrageous politicians, you’re probably familiar with Senator John Kennedy. Despite sharing a name with one of our most famous presidents, Kennedy made his bones in politics. He quickly become known for being sharp, self-effacing, and always ready to give a sound bite that sounds like it was from 1955. Built to be in the VEEP writers room, forced to be in politics.

His wife, Becky, is known to the senator’s followers for many reasons, and her famous chicken salad is one of them. Kennedy dropped some lore around it. early in his social media days, but it wasn’t until September 2026 that he finally released the recipe to the world, saying it would “cure ED” and give you hair (on your head? other places?). Tongue-in-cheek, obviously. Or maybe…maybe not. I have no interest in diving into the bodily history of any senator beyond eating what they eat. We’ll leave it at that.

For now, let’s focus on the viral chicken salad that may or may not be better than sex, depending on who you ask and how fulfilling their life is.

INGREDIENTS

Poached Chicken

  • 8 sprigs parsley

  • 2 sprigs thyme

  • 1 small onion, halved

  • 1 small carrot, halved

  • 1 celery stalk, halved

  • 2 lbs chicken breast

  • 5-6 cups chicken broth

Chicken Salad

  • ⅓ cup sour cream

  • ¾ cup mayonnaise

  • 2 tbsp Dijon mustard

  • 3 tsp lemon juice

  • Salt and pepper

  • 2 celery stalks, diced

  • 2 tbsp diced shallots or onions

  • 3 tbsp finely chopped fresh dill

  • 2 tbsp finely chopped fresh parsley

  • 3 tbsp chopped green onions

  • ⅓ cup drained capers


INSTRUCTIONS


Poached Chicken

Put all ingredients in a pot, bring just to a boil, reduce heat to low and cover. Poach for 20 minutes, remove pot from heat, uncover and cool for 30 minutes. Shred and dice chicken, place in a large bowl, and use a hand mixer (low speed) to further shred the chicken. Strain broth and freeze for later use.

Chicken Salad

Mix mayo, lemon juice, mustard, salt and pepper in a small bowl. Toss prepared chicken with remaining ingredients. Stir in dressing and gently combine. Refrigerate for at least 1 hour.

You can tell by the look on my face that I’m a happy man. Visually? Looks just like a regular chicken salad (I may have put too fine a shred on it), though with the capers and additional greenery it really pops.

THE VERDICT

Like a bird dog at the grocery store, I’m overwhelmed with abudance.

That’s my best shot at impromptu John Kennedy folksiness. Yes to this recipe. The capers, the green onions, all just delicious. Very very good chicken salad that may be better than sex…at least for the politicians out there.
